Buttery Cracker Toffee

Buttery and addictively crunchy, cracker toffee is a must have treat for your holiday cookie tins.


Every Christmas season I always give out cookie tins filled with my homemade goodies for my nearest and dearest. Now, when I construct my heartfelt tins I don’t just like to fill them with cookies but little other treats as well. And this Buttery Cracker Toffee is one of my favorite little treats to make. It takes almost no effort to prepare the toffee and it's beyond delicious. The combination of buttery toffee and crunchy Ritz crackers are positively addicting and you won’t be able to stop eating them once you start.


Buttery Cracker Toffee

1 cup unsalted butter

1 cup light brown sugar

2 sleeves butter Ritz crackers

2 cups semi-sweet chocolate chips

Chopped nuts, sprinkles, flaky salt or M&M’s (optional)


Preheat your oven to 400°F and line a standard-sized cookie sheet with foil.  Lightly spray with cooking spray or grease lightly with butter.  

Layer the ritz crackers evenly over the foil salted side up. There will be spaces between the crackers and not every edge has to be completely filled in.


Make your toffee by combining the butter and brown sugar in a small saucepan over medium heat, stirring occasionally. Let your toffee come to a boil. Once boiling, set a timer for 3 minutes and allow it to boil undisturbed. It’s very important to not stir your toffee when your timer is going. If you do, you will disrupt the sugar crystals from caramelizing and your toffee will become grainy. 

Immediately remove the toffee from the heat and pour it over your crackers. It's ok if some of them start to float, just try to keep them in an even layer. Carefully spread the toffee with an off-set or silicone spatula to completely coat crackers.

Place in the preheated oven for 5 minutes to let the toffee cook over with the crackers. 

Remove your toffee covered crackers out of the oven and turn off the oven. Evenly sprinkle your chocolate chips over the hot toffee. Return the pan to the oven for two minutes and then remove again. Use a silicone spatula or butter knife to spread the melted chocolate chips evenly over the toffee soaked crackers.

Be careful when spreading the melted chocolate. The toffee won’t be quite set yet and will still be very hot. If you find the crackers move a bit just carefully push them back into place with the spatula. 


Sprinkle evenly with chopped nuts or anything else that you would prefer. I personally love holiday sprinkles or Christmas M&M’s. 

Allow to chill in the refrigerator for at least 30 minutes or until the chocolate hardens.  Cut into pieces using a large knife or break apart with your hands. You can store your cracker toffee in an airtight container until you are ready to enjoy.
