Double Chocolate Cookies

On the fifth day of cookies I slaved and baked for thee, rich chocolate cookies!


The fifth cookie of Christmas is actually one of my most treasured cookie recipes. It’s one of the first cookie recipes I came up with and I’m truly proud of it. It’s a very rich and fudgy chocolate cookie with a deep cocoa flavor. The depth of flavor is due to the combo of brown sugar and black cocoa powder. The brown sugar enhances the chocolate flavors while the black cocoa gives it a deep chocolate flavor that reaches the darkest depths and recesses of the human soul. Very similar to the sorcery that is accomplished by the famed Oreo, especially with the addition of white chocolate chips. It’s definitely a thing of pure chocolate beauty and cookie magic!


Double Chocolate Cookies

1 cup unsalted butter, room temp.

1½ cups brown sugar 

2 teaspoons vanilla

2 eggs

2⅔ cups all purpose flour 

½ cup black cocoa powder or dark cocoa powder

1 teaspoon baking soda

½ teaspoon kosher salt

2 cups white chocolate chips


 Preheat the oven to 350°F degrees. With a stand mixer, cream  butter, brown sugar, and vanilla until creamy and fluffy. Add the eggs and mix until just incorporated.

 In a separate bowl, combine the flour, cocoa powder, baking soda, and salt. Add the flour mixture to the creamy butter mixture and mix until incorporated. The dough should be thick and sticky, but dry enough to touch with your hands without making a huge mess. If it's still too sticky, add more flour. Stir in the chocolate chips.

Roll the dough into even balls and place on a baking sheet lined with parchment paper. Bake for 8 minutes and transfer to a cooling rack right away. They will be underdone and super puffy, which makes them perfectly soft, thick, and fudgy when cooled. Store cookies in an air tight container when completely cooled.

*Notes

If you can’t find black cocoa powder, dark cocoa powder will work just fine. It just won’t have a super rich chocolate flavor. 

It’s very important to not overbake these cookies. If they are overbaked they will not be chewy or fudgy. They will become a little hard and crispy. 

If you want even more chocolate because, let's face it we all have those days, you can add 1 cup of semi-sweet chips and 1 cup of white chocolate chips. It will give the cookies a more dynamic chocolate flavor.
