Ooey Gooey Popcorn Balls

Beware lil’ ghosts and ghouls these popcorn balls will make you drool.

When I was a child one of the best parts about Halloween was of course the school’s Halloween party. It was a time for us kiddos to show off our costumes as well as indulge in sugary sweet treats. One of my favorite treats that were always at my class’s party were homemade popcorn balls. They were a special treat made by one of the moms and stood out from the bags upon bags of Halloween candy. Now as an adult, I crave this sweet popcorn confection. By using grass-fed butter and tons of marshmallows, I’ve created a sweet and rich treat that’s perfect for any ghouls and goblins.

Ooey Gooey Popcorn Balls

8 cups popped popcorn

5 TBSPS grass-fed unsalted butter

12 oz. bag marshmallows

2 tsp vanilla extract

¼ tsp kosher salt

Sprinkles (optional)

Line a baking sheet with parchment paper and put aside.

In a large pot, melt the butter on medium low heat. Once melted, add the marshmallows and stir to combine with a rubber spatula. Stir continuously until the marshmallows have completely melted into the butter. Add the vanilla and salt, mix until fully incorporated. Add the popcorn and mix until the marshmallow mixture completely coats the popcorn.

Turn the heat down to low to keep the marshmallow from setting. Glove your hands with vinyl gloves and coat your hands with a bit of vegetable oil or baking spray. Take a handful of the warm and sticky popcorn, squeeze into a ball just like you’re making a snowball.

Place the popcorn balls onto your parchment lined baking sheet. Sprinkle with Halloween sprinkles if desired. Let the popcorn balls sit for about an hour to cool. Enjoy your ooey gooey Halloween treat!

You can place each popcorn ball in a baking paper for easier storage and handling.

Store the popcorn balls in an airtight storage container, they will keep for about a week.

*Notes

It’s very important to grease your hands before working with the sticky popcorn. Without the oil it will be nearly impossible to form the balls. The popcorn will just end up sticking to your fingers.

By using grass-fed butter, for this recipe, you will get a richer tasting popcorn ball. It’s not imperative that you use it but it is highly recommended.
