Peanut Butter and Jelly Cobbler

When your childhood favorite becomes your new favorite dessert. That’s right, peanut butter and jelly disguised as a delicious cobbler.


Peanut butter and jelly is a childhood favorite to many and I was inspired to turn this comforting sandwich into a delectable dessert. This craziness all started when I was brought a Concord Grape Pie by my husband's grandmother and upon that grapey pie gracing my taste buds I was hooked. I needed more grape filled desserts in my life. Thus the idea for a grape cobbler came to mind but not just any cobbler, a peanut butter and jelly cobbler. With a sweet concord grape filling and topped with a sweet peanut butter biscuit, this cobbler is the very essence of what makes the PB&J such a special treat.


PB&J Cobbler

Concord Grape Filling

8 cups Concord grapes

1 cup granulated sugar

1 lemon, juiced

¼ cup cornstarch

¼ tsp kosher salt

1 tsp vanilla extract

Peanut Butter Biscuit Top

2 cups all-purpose flour

1 tablespoon baking powder

 2 TBSP white sugar

1/2 teaspoon cream of tartar 

1/4 teaspoon salt 

1 cup buttermilk 

¼  cup melted butter 

¼ cup creamy peanut butter


To prepare the Concord grape filling, squeeze the grapes into a large bowl inorder to separate the flesh from the skin. Reserve the grape skins in a separate bowl. In a medium sized pot, place the pulp and simmer until the grapes burst and let out their juices. Mash the grapes with a potato masher to help the process. Remove the seeds by straining the grapes through a mesh strainer. With the back of a spoon, push on the grapes to release all of the juice from the pulp. Discard the squeezed grapes and seeds. Add the grape skins to the grape juice along with the lemon juice, cornstarch and salt. Stir the mixture until the cornstarch is completely dissolved into the grape juice. Cook on medium low heat until the grape juice thickens. Take off the heat and stir in the vanilla, leave to cool and put aside. 


Preheat the oven to 350°F.

In a large bowl, combine flour, baking powder, sugar, cream of tartar and salt. In a small bowl, melt together the butter and peanut butter in the microwave. Leave the butter mixture to cool for at least five minutes. Stir in buttermilk and the butter mixture just until the dough is moistened, if the dough seems a bit dry you could add another ¼ cup of buttermilk. 

In a 9 inch baking dish, place the concord grape filling and top with the peanut butter biscuit dough. You want to dollop on the topping so it resembles cobblestones, hence the name cobbler.

Bake your cobbler for 50-60 minutes or until the filling is bubbly and the biscuit top is golden brown.

Let the cobbler cool for at least 10 minutes before enjoying it warm.
