Potted Plant Pudding Cups

Don't be fooled by its appearance - this dessert has a deliciously sweet surprise!

This recipe is a fun and playful twist on a classic dessert that's perfect for April Fool's Day. It starts with crumbled brownies or chocolate cake that are layered with rich and creamy chocolate pudding and crunchy Oreo crumbs for the “dirt”. Then they are decorated with fruity gummy worms and a fresh mint sprig. In just minutes you can have a delightful garden just waiting to be devoured.

Potted Plant Pudding Cups

Favorite brownies or chocolate cake

Chocolate pudding, of choice

Oreo crumbs

Fresh mint sprigs

Gummy worms (optional)

Crumble brownies or cake and place at the bottom of a cup or a clean plastic planter.

Top with chocolate pudding and Oreo crumbs, continue to layer them until you reach the top of your cup or planter.

If using, cut the gummy worms in half and press them in so they are sticking out of the “dirt”.

Place a mint spring in the middle of each cup so it looks like there’s a plant growing out of the planter.

Serve and enjoy your April Fool’s treat!

*Notes: This is more of an idea blog post than a recipe. I wanted this to be a fun post that you can use for April Fool’s Day or any other springtime celebration. I left it very open so you can choose what kind of cake or brownies you want to use and the same with the pudding.

When choosing your vessel for these pudding cups, if you want to use mini planters like I did please don’t use actual terracotta pots. It’s much safer to use clean plastic plant pots. When they make terracotta pots they can be made with hard metals in the clay such as lead, which is definitely not food safe! I found these cute colorful pots on Amazon. But you can easily find plastic plant pots in any craft or dollar store.

I had my homemade duck egg brownies so I used those as my cake layer. But you can use whatever you have around. For the chocolate pudding, my favorite is by Kozy Shack but you can use what your favorite is!

You can even use vanilla components if you don’t want chocolate on chocolate. I would just recommend using chocolate Oreo crumbs so that the illusion of it being a potted plant isn’t broken until you start digging in.

If you can’t find fresh mint feel free to use another herb. I would recommend fresh parsley, thyme or even rosemary. This trio of herbs give really good potted plant vibes.

Remember the gummy worms are optional! If pudding covered gummies aren’t your thing feel free to omit or you can substitute with some cute spring themed flower sprinkles or even edible Easter grass.
