Sticky Date Bites

A simple two ingredient snack to satisfy any pesky afternoon craving.

Sticky Date Bites are a healthy way to have an afternoon salty sweet snack. I know personally, I get peckish in the afternoon between lunch and dinner. Especially when I have been working in the garden these little help give me the little pick me up I need to power through the rest of my day.

Sticky Date Bites

*Makes 9 Date Bites

½ cup salted mixed nuts

1 cup pitted dates

To a food processor, add your mixed nuts. Pulse the nuts until they are finely chopped. Once the nuts have been processed, add the dates and pulse until the dates are chopped and start to turn into a thick paste coating your chopped nuts.

Portion the date mixture with a tablespoon and roll each portion into a ball. Place the balls on a parchment covered sheet pan and set in the freezer for 30 minutes or until the balls are solid.

Store your date bites in an airtight container or freezer bag, they can be kept in the freezer for 3-4 months.
