Whipped Brown Butter
Rich with subtle notes of salted caramel, whipped brown butter takes a simple piece of buttered bread to the next level.
Whipped brown butter is one of the simplest accompaniments you can make as well as one of the most delicious. It only takes one ingredient and a little bit of effort to transform the butter into something really special. The very simple action of cooking the butter’s milk fat brings out the saltiness of the butter as well as giving it subtle notes of rich caramel. That rich caramel flavor is the key to making your buttered toast and/or bread into something that’s truly special.
Whipped Brown Butter
½ cup salted butter
Ice
Whisk
Stainless steel bowl
In a small saucepan, set your butter to medium high heat.
Once your butter has melted, turn the heat down to medium low heat. Cook your butter until the milk solids become golden brown and the butter smells very reminiscent of caramel, remove from the heat.
In a large bowl, fill the bottom of the bowl with ice.
In a separate bowl, preferably stainless steel, place your brown butter. Set the bowl of butter in the bowl that’s filled with ice. Whisk the butter until it becomes solid and creamy.
Place your whipped butter in a glass or ceramic bowl and enjoy. To store your butter, place a piece of parchment on the butter and press it down into the bowl. The whipped brown butter in this state will keep on your counter for about a week, longer if you store it in the fridge. I personally store it right on the counter so it stays soft and spreadable. It’s so addictive and wonderful on our morning toast that it never lasts the week.
