White Peach and Vanilla Pie Filling

White Peaches aren’t my norm, for pie filling. But they my might be my new fav.


White Peaches are not my usual choice of peach but when you’re given a gift you definitely can’t let it go to waste. I found it extremely challenging to think about what to use it for. Since I’ve been working on pantry staples I figured I’d make another pie filling for the fridge. I know, I know when you think of peach pie you think of a yellow orange goo not an anemic, ghostlike gel. However, with a bit of jazzing up it actually turned out to be something very special. 

The soft, creamy notes of vanilla heighten the White Peaches’ natural sweetness and elevated it to new heights. The pure vanilla extract gives this pie filling a custard like mouth feel and is very reminiscent of a creamy vanilla pudding. Upon initially tasting this surprising wonder, I couldn’t seem to put down the spoon. I just stood there, “tasting” the pie filling; needless to say it’s beyond delicious. It makes me very excited to use it for its intended purpose in the coming week. I know, a week can be a terribly long time to wait but good things come to those who wait. Until then give this simple filling a try and then we can make the secret future baked good together.


White Peach and Vanilla Pie Filling

3 White Peaches peeled and cut into bite size pieces

¼ cup granulated sugar

¼ tsp kosher salt

¼ cup of cornstarch

1 cup of water 

2 tsp of pure vanilla extract


In a small pot, combine all of the ingredients. Stir until the sugar and cornstarch are dissolved. 

While mixing constantly, set to medium high heat and cook the mixture until it begins to thicken.

Once completely thickened you can store it in a glass container and cool. Store in the fridge for up to a week.
